The most representative and important site where you kind find the Trullo (Limestone) is Alberobello city, known as the capital city of the Trullis just because its historical centre is composed of 1500 Trulli constructions. The old village is subdivide on two small districts, Monti where you will see about 1300 of the trulli and in Aia Piccola about 400 trulli. The city was declared in 1930 national monument and in 1996 they have also become part of UNESCO World Heritage.
Alberobello was founded in the XV Century by Acquaviva Counts of Conversano. Its name is derived from the Latin words Silva Arboris Belli (the war-tree forest).
The visit to the old dwelling starting from the Monti District where you can find the little streets and stairs ways where you see the craftsmen’s workshops all around working on prototypes of Trulli made of stone, wood carving, polychrome fabrics and ceramics hand painted. Among the trullis stand up the Trullo Siamese and the Sant’ Antonio Church Trullo that has a Greek cross shape. Walking through its streets you can find this mysterious place full of local colour combined with holy and secular characters (stars, crosses, astral designs) on top of the domes then arrived to the Aia Piccola District where almost all the trullis are used as homes.
On eastern direction where is the new site of the city you can go and visit the Trullo Sovrano (Sovereign Trullo) made on the second half of the XVIII century; the Casa d’Amore (House of Love), which is the first structure made with lime and bolus; the Sanctuary with a neoclassic style dedicated to two saints Cosma and Damiano the city guardians.
The forest area called “Sylva aut nemus arbores belli” ( The war tree forest) is known since the XI century and its named derivates from a bandits confrontation that took place in this area.
Alberobello rice on the slopes of “lama” without any defensive enclosure nor territory, free form representative buildings, patrician houses or cloister, developing improvised with one floor houses, on narrow and widening streets and houses surrounded by vegetable gardens.
A community developed, held by Count Giangirolamo Acquaviva d’Aragona Counts of Conversano who plainly broke the customary rule that prevented the feudal vassals from building new towns without the royal permission. In 1797 the people from Alberobello after many years of precarious means of existence presented a petition of help to the Spanish King Ferdinand IV of Aragon and give them freedom on May 27th 1797.
Saint Anthony’s Church (Chiesa di S. Antonio), built on 1926, on top of the hill overarch the view on Monti District. Represent the typically alberobellese architectonic design with a dome of 21,50 m high and two trullis structures a side and a bell tower with a trullo shape.
Siamese Trullo (Trullo Siamese), one of the first constructed building made on top of a rock with it originally double shape is circumscribed by buttress and the foundations made from boulder (hard sandstone) In the inside is equipped with a low fireplace and no windows. The story of this place tells that two brothers who lived on the same Trullo fall in love of the same young girl who promised faithfulness to the biggest brother. The youngest brother and the young lady felt in love behind of his back and this create a fight in the family. The biggest brother sent them away but his brother came back to claim his right on the Trullo and then this was divided in two. The jealous brother made another door on the back side of the Trullo which overlooks the other road.
Sovereing Trullo (Trullo Sovrano), made on the first half of the XVIII century, it’s the only Trullo construction with an upper level, capturing in this way the best technique and stile on this type of constructions. The recognizable ingeniousness of the artist how create it as well the achievement of built-in an stair way to the second level, safe, cosily not encumbering and invisible.
The house of Love (La Casa d’Amore), placed in Ferdinando IV Square and built after the Declaration of Freedom in 1797 the House of Love is the representation of the Alberobellesi’s victory upon the Count of Conversano and his Law about the prohibition to make changes on the Trulli and not to use the mortar. The house was made with a different design than Trullo and with mortar as a sign of revelation against that law. At the front of the house you can read an inscription as remembrance of that incident.
The Sanctuary of Saint Cosma and Saint Damiano (Il Santuario dei SS. Cosma e Damiano), the church has a façade on a neoclassic stile of the 1885. The finishing of the outsides was completed years after but following the original design of the alberobellese architect Antonio Curri. The internal decoration are more recent and made by the decision of the Priests of the church. Besides the two beautiful statue of the city Guardians Cosma and Damiano you will also find another sacred images, fresco paints, altars, the church’s choir, an organ and other religious paintings.
The territorial museum (Il Museo del Territorio), located between the oldest group of Trulli ( XVII century) perfectly restore. The local government with an European finance has nowadays the samples of different aspects of the Trulllo and caves, from the culture of the material to the popular religious, from the craft made pieces to samples of the architecture made of stone, etc.
Monti District (Rione Monti), include 1030 Trulli, you can arrived here from seven different artistically and colorful streets which takes you to the top of the hill where you will find the beautiful church of Saint Anthony and admire the unique trulli existing on the city.
Aia Piccola District (Rione Aia Piccola), its name “Aia” recalls a spacious clearing that in the times back was used for the threshing of the grain. All the district located at Southeast includes 400 trulli most of them residence. The area offers the idea of the old medieval village.
Bosco Selva, is a park located a few hundred meters from the centre city, to South of Alberobello. You can take guided route walking in the forest or go with your bicycle to admire the thick vegetation of roverelle and fragni, as well the numerous wild animals (foxes, triton, rates, jays) you can also have the possibility to reach the locality of Locorotondo or the Valley of Itria.
Barsento, to north of Alberobello, attainable on foot or in bicycle (about 5 Km) visits, besides the park, an ancient abbey of the VI Century and some farms of the zone.
Pianelle, across the Bosco Selva route, it is reached the forest of the Pianelle in proximity of the town of Martina Franca to admire also here the thick vegetation of the area. Canale di Pilo, walked with mixed route, in the middle to trees of olive, cherry tree and almond tree, deposition of an ever set peasantry civility. Long the road is possible to stop in a small forest to refresh and to pick the excellent local mushrooms.
The gastronomy of Alberobello takes care jealously the secrets of the ancient peasantry tradition of Puglia, poor but much agreeable and healthy: vegetables, olives, oil, wine, pasta and bread are therefore the authentic protagonists. Above all the pasta – home made by hand from the housewives, in shape of lasagna, laganelle, "recchiettelle", strascinate - seasoned with pork sauce, with the ricotta or with the vegetables. The best here is the typical “orecchiete” with the tops of turnips, those with the strong ricotta or the pasta "alla crodaiola" (with tomato, cacioricotta cheese and basil). Between the soups to taste, the green one - with cabbages, celery, cicely and thistles in the pork soup - the mashed of fava beans with cicorielle, finally "la polenta" of fava beans - to serve on slices of browned bread in a fried of garlic and oil -. Especially fragrant and agreeable the bread, the taralli, the focacce, gotten ready with the more different ingredients, the pizzas filled with pork and cheeses typical of the region. Also with an excellent quality the dairy production: pecorini, fresh ricotta and grate ricotta, and then scamorze, provole, caciocavalli, the "manteche", with their delightful heart of butter, the mozzarellas and the burrate. Speciality cookery of Alberobello with "gnemeriidde", agreeable giblets of lamb or kid, cut to strips and wrapped to ball with the bowel, and the "turde 'n zulze ", meaning the thrushes in gelatine, boiled and preserved in the glass (to consume after a week) in dry white wine.

Appeared on the main road of the town "La Cantina" represents the right occasion to discover the glamour of the historic city centre of Alberobello, before to sit on the tables of the place managed from the '90 from the family Pepoli and place in a building of the beginnings of the century, where the kitchen to see invites the hosts to follow the varied phases of preparation of the dishes.
To begin with the antipasti suggest mozzarellas’ of the Valley d' Itria, sausage, capocollo of Martina, loin, salami of pigskin, country pizza with onions and tomato. The first dishes are of fresh pasta (orecchiette, fricelli, tagliolini) with vegetables (squashes, eggs, flowers of squashes, broccoli, chicory, turnips and mentuccia). The second course is a flan of chicories, au gratin with the eggs and with an inside also mincemeat of meat and mozzarella. To experience it is also teasing fried bacon and flowers of zucca. But also the artichokes came proposals in infinite ways, among which excels the dish of artichokes, peas, and new fava beans. All centred on the meat, from the chop of horse to the braid of colt to the irons with pig mushrooms, passing for the meat roll and wrap of lamb on juice. Dessert of almond and wine of the house served in carafe are included in the price.
